Cocktail suggestions:

Plum and Apple Spritz

50ml Silent Pool Coronation Gin

15ml Plum Juice

15ml Apple Juice

1 Tea Spoon Honey

In a small tin, add all ingredients and stir until combined.

In a wine glass, add ice, add your mix and top up with English Sparkling Wine.

For the juices and the honey, local taste the best!

Garnish with an apple slice

Hedgerow Sour :

40ml Silent Pool Coronation Edition

15ml Dry Vermouth

25ml freshly squeezed Lemon Juice

25ml Egg white or vegan alternative

20ml Hedgerow Syrup

Pour all ingredients in a shaker, shake once without ice in the tin to foam the ingredients, open the shaker and add ice, shake a second time to cool down the mixture.

Double strain out in a coupette and enjoy!

Garnish with a Lavender sprig.
